With homemade beans and going a little easy on the meat (depending on how good a deal you find! 🙂 ) this is definitely under $2.50 to feed four; even with tinned beans and a little more meat, it’s cheap.
I’m a cook of the ‘recipe is just a suggestion’ and ‘adjust as you go’ variety, so look on this as more of a formula. 🙂
6 cups baked beans (3 14-oz.
tins)
1 14-oz. tin diced tomatos (2c) – more if you prefer a ‘soupier’ consistency
3/4-1 lb. meat – I have used leftover ham, ground beef, kielbasa/smoked sausage, LO sloppy joe-type meat, breakfast sausage patties, crumbled…and have even mixed and matached!
1-2 onions, diced
2-3 med. potatoes, chunked
2-3 med carrots, chunked
diced bell pepper
black pepper
garlic powder
bbq sauce of choice
brown sugar
mustard powderbrown meat with onion and peppers if using. (you could also add fresh or bottled minced garlic here.)
add beans, tomatoes, and other veggies; season to taste with bbq sauce, pepper, garlic powder, mustard powder, brown sugar.
we serve with cornbread or homemade whole wheat bread. other root veg or ‘stew vegetables’ would be good additions/substitutions.

Yum, we do this with our leftovers when we’re camping & call it “Campfire Stew”- it always comes out great. A very filling meal, super easy to throw together. Thanks for sharing

This is a great recipe. The one I make is very similar except for the carrots…I will try it with them next time.
