      To make this even cheaper, next time I will use my own cornbread mix, but here is what I whipped up last night. I didn’t follow any other recipe because they all called for cornbread dressing-type ingredients (sage, celery) and I wanted something different. It was so good, and got two thumbs up from the whole household!

      2 boxes Jiffy corn muffin mix
      2 eggs
      2/3 cup milk
      1 cup frozen corn kernels
      1 cup shredded cheddar cheese
      1 package of hot dogs (slice each one horizontally, then in fourths vertically)
      1 Tbsp dried minced onion

      Mix up corn muffin mix, eggs, and milk. Add cheese, corn, hot dog bits, and onion. Pour into a greased 9 x 11 dish.

      Bake at 425 for 30 minutes.

      I printed this off, will have it for dinner one night. DH will make his own cornbread mix. We have made ‘Corndog muffins in the past, very good.

      We freeze them then take them out & zap them, Very good lunch.

      I made this one for dinner tonight. The verdict is in and it’s a keeper. I added crumbled cooked bacon to the mix also.

      The kids inhailed it.
