Cornbread (Vegan)
2 cups corn meal
2 cups whole-wheat pastry flour
4 tsp baking powder
1/2 tsp. salt
2 cups soy milk
1/4 cup maple syrup
1/2 cup vegetable oil
Preheat oven to 400 degrees. Lightly oil a 9 x 13 inch (or 8 x 12 inch) baking dish or a 12 inch iron skillet. Sift dry ingredients into mixing bowl. Combine the liquid ingredients and whip together. Add the liquid to dry ingredients, stirring until no lumps are left. Pour batter into the pan and bake for 25 to 35 minutes. Makes about 15 servings.
