Corn on the Cob
Prepare in your favorite fashion — boiled, grilled, or roasted. Reserve a cup of ‘shaved’ corn for later in the week.
Corn Salsa
Mix 1 cup reserved corn, 1 each diced avocado and tomato, 1/4 cup each chopped red onion, cilantro and lime juice, 2 Tbsp oil, 2 tsp sugar and 1/2 tsp salt. Serve as a dip for veggie fajitas or as a topping for a salad instead of salad dressing.
