      Corn Casserole

      2 eggs slightly beaten
      1 tablespoon chopped onion
      1 can whole kernel corn (or 2 cups fresh corn+1 cup water)
      1 cup sour cream
      1 tabelspoon pimento
      1-(8 1/2oz) package corn muffin mix
      1 can creamed styled corn
      1 tablespoon green pepper
      1/2cup shredded swiss cheese

      Preheat oven to 350 degrees. Mix all ingredients, except the cheese. Place in an 8″ square baking pan.

      Bake 30-35 minutes. Remove from oven and top with cheese. Bake 10-15 additional minutes.

      Serves 12-14.
