for those who do not use dairy but dont want to miss out on some great recipes, does anyone know how to substitute the following ingredients?
dry nonfat milk powder
any and all info will be greatly appreciated.

You can use any non-dairy milk products for substitutes. You can buy non-dairy powdered milk. You can make your own non-dairy milk (soy, rice, oat and nut milks) or buy it.
Coconut milk is a good substitute in baked goods.
Non-Dairy Sweetened Condensed Milk
3 cups Soy or other non-dairy Milk
1/2 cup Sugar
Add the milk and the sugar to a saucepan. Cook over medium-low heat, stirring constantly, until volume is reduced to 1 cup. Add a few drops of vanilla to taste, and a pinch of salt.
Cool before using. May be stored in the refrigerator.
Non-Dairy Evaporated Milk
Put 3 cups of soy or other non-dairy milk in a saucepan. Cook over medium-low heat, stirring constantly, until the volume is reduced to 1 1/2 cups.
2 to 3 teaspoons Lemon juice, Apple Cider Vinegar or Cream of Tartar
Plain Soy or other non-dairy Milk
Add enough of the milk to the juice, vinegar, or cream of tartar to make one cup. Let the solution stand for ten minutes before adding to your recipe.
Non-Dairy Heavy Cream
Blend 2/3 cup of plain soy or other non-dairy milk with 1/3 cup extra light olive oil. This will equal 1 cup of heavy cream for your recipes, but it will not whip.
