This is a great recipe for a coffee-klutch or brunch with friends.
Coffee Cake III
2 cups flour
1 tbs lemon zest
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar, divided
3/4 cup butter, softened
1 cup sour cream
2 eggs
1 cup blueberries
Heat oven to 350º.
Combine flour, lemon zest, baking powder, baking soda and salt. Reserve 1 tbs sugar. Beat butter and remaining sugar in large bowl with mixer until light and fluffy. Blend in sour cream and eggs. Gradually add flour mixture, mixing well after each addition.
Pour into 9-inch pan sprayed with cooking spray. Top with blueberries and reserved sugar.
Bake 55 min or until toothpick inserted in center comes out clean. Cool bread in pan 10 min. Remove from pan to wire rack. Cool completely. Serves 16
