As I promised, I’m posting one of my favorite recipes for codfish. Here in Portugal we get dried and salted codfish ate the supermarket, and then it has to be in water for at least 24 hours, changing the water halfway, otherwise any dish will be too salty. I learned that you may get fresh codfish, and to be honest I don’t know how it tastes, but it should be ok.
You can also make this recipe with shredded chicken or tuna.
So moving on to the recipe:
Saute minced onion on olive oil, shred the fish, and add it to the onion, and let it cook for a while. Then add fried potatos in sticks (french fries?), mix everything, and the add beaten eggs to the whole mix. Let the eggs cook, but not to much, always mixing, so that everything is well “blended”.
It depends on your preference, but I like it more wet, so I try not to let the eggs cook too much.
When it’s done you can decorate with parsley and olives.

Thanks for the recipe! I love trying recipes from other countries!!! I tried Bolivian, Mexican, Spanish, Peruvian, etc.
Now I can add Portuguese! 🙂 Keep posting recipes!!! 🙂
