Coconut Shrimp Curry….in a Hurry!
In less than 20 minutes this dish can go from a great idea to Dinner Served!
1 large onion
2 tbsp. olive oil
1 tsp. bottled crushed garlic
1 tsp. ground coriander, cumin, curry
1/2 tsp. cinnamon, chili powder, ginger, salt
1/4 tsp. black pepper
1 cup water
1 8-oz. can tomato sauce
1 cup shredded coconut
1 lb. peeled shrimp, cooked
1/4 cup sour creamPeel the onion and chop into 1/2 inch pieces. Put the oil into a wok or large frying pan and begin heating over medium-high heat. Add the onion and cook about 5 minutes, stirring occasionally, or until the onion begins to soften.
Add all the spices until the have dissolved. Add the water, tomato sauce, and coconut and bring to a boil. Turn down to medium heat and cook, covered for 5 minutes. Add the shrimp. Then add the sour cream. Continue heating until hot. Serve immediately with rice.
