Classic French Fries
2 large russet potatoes
1 48-oz can shortening
Peel both potatoes and slice to 1/4 square strips after they have been dried. Rinse the fries in a bowl filled with 8 cups of cold water. Dump the water out, refill the bowl with water and ice and let the fries sit for 1 hour. Set deep fryer to 375 degrees F and spoon the shortening into it. Remove the fries from the bowl, let them dry for about 10 minutes and add each fry into the deep fryer for 1 1/2 minutes at a time. As the fries begin to turn brown, take them out and let them cool. After the fries have cooled, put them into a resealable bag and freeze until they are completely frozen. As the fries freeze, preheat the deep fryer. Split the fries in half and add one at a time into the hot oil. Fry for around 5 minutes. Serves 6-8.
