Citrus Ginger Meatballs:028: 2 lb ground beef 1/4 cup seasoned bread or cracker crumbs 1 egg, beaten milk, to moisten 1/4 cup orange marmalade 1 tbs honey mustard 3/4 tsp ginger 1/8 tsp red pepper (optional) Mix the first four ingredients in a bowl and shape into meatballs. Place the meatballs in the crockpot. Mix remaining ingredients and pour over meatballs. Cook on low, 6 to 8 hours. If you prefer a ‘browned’ meatball, dump everything in a large sauce pan and cook over medium-high heat until the desired browning is achieved — about 10 minutes.
