1 *zucchini bread mix* (posted in the mixes section) 1 tbsp buttermilk 3 large eggs 1 tbsp vanilla 1/2 cup sour cream-(I usually use light) 2 cups grated zucchini 1/2 cup grated carrot *optional* 1/2 cup canola oil and 1/2 cup melted butter
1. Preheat oven to 350.
2. In a large bowl, add contents of *zucchini bread mix*. Whisk to mix well. Set aside.
3. In a medium bowl, whisk eggs, vanilla, and oil/butter. Fold in sour cream, zucchini, and carrots-if using.
4. Add wet ingredients to dry ingredients and stir just until combined. Don’t over mix.
5. Pour batter into 2 well greased 8 1/2 x 4 1/2 in loaf pans. Bake for 55 – 65 minutes or until done. Cool for 10 minutes on a cooling rack before removing loaves from the pans.
