I didn’t use oreo’s, so I can’t speak to that— but to the rest, I’ll
share at least my experiences…

I would dredge my cherry in the chocolate, then lift it out and onto the
bottom of the kiss which I”d be holding in my left hand. I’d hold it
there a second or two as it started to cool, then lay the whole thing on
a wax paper tray, holding them together. If they separated, I’d wiggle
and fidget with the two pieces, holding by the nose and tail until I had
the right balance. Seems it worked best when the nose was tipped up a
bit??
the ears are a pain- I learned to put mine in my garden window which is
cold right now- it sets up faster that way. After I’d dipped ’em all,
the first ones were kind of tacky. At that point I’d poke in the ears.
The chocolate has to be somewhat firm- if it’s hot and soft, they just
flop.

don’t worry about nice and neat— you’re the only one seeing detail on
these things. Once they completely set up (the next day), I peeled mine
off the wax paper and if need be trimmed away excess chocolate from round
the bottom til they looked more mousey.
I served mine without oreos on a christmas plate with little chocolate
sprinkles for droppings. If you want to use Oreo halves (or whole dipped
ones), I would put them on at the last minute if it presented a problem
during assembly due to hot chocolate.
