I give these every year and they are now requested!
2 cups semi sweet chocolate chips
1/4 cup heavy cream
2 Tbls. Butter or margarine
1 Tbls Liquor ( completely optional)
1 Tblsp. Shortening
Melt 1 cup chocolate chips in heavy saucepan until melted. Remove from heat and stir in butter until melted. Stir in cream and liquor, if desired.
Place pan in fridge until cool enough to hold shape, stirring occasionally. When cool enough, shape into balls, about rounded teaspoon. Place in freezer until hard.
In meantime, melt 1 cup chips and shortening in heat safe bowl over simmer pan of water. Dip truffles one at a time until coated. You can jazz these up with sprinkles, colored sugar, vanilla glaze(little confectioners sugar mixed with just enough milk to make glaze) or a different colored chocolate.
I box these up and give as gifts! Note: Not recommended to double up the recipe, but I have made several batches of teh centers and dipped them all at the same time. If you are having a hard time finding boxes, look in the wedding section of the craft store for cake boxes, they hold a few nicely and are plain white!
