Chocolate Rum Balls from Chocolate Lovers Cookies and Brownies
1/2 c butter, softened 1/3 c granulated sugar 1 egg yolk 1 tbsp dark rum 1 tsp vanilla 1 c all-purpose flour 1/4 c unsweetened cocoa 1 c finely chopped walnuts or pecans Powdered sugar
Cream butter, granulated sugar and egg yolk in lg bowl til light and fluggy. Blend in run and vanilla. Stir in flour, cocoa and nuts. Mix well. Cover. Refrigerate til firm; about 1 hr.
Preheat oven to 350 degrees. Lightly grease cookie sheets. Shape dough into 1 inch balls. Place 2 inches apart on prepared cookie sheets. Bake 15 – 20 min, or til firm. Remove to wire racks to cool. Roll in powdered sugar.
