Chocolate Cherry Christmas Mousse

Amount Measure Ingredient — Preparation Method
1/2 cup very hot skim milk
3 tbl cold water
1 envelope unflavored gelatin
1/4 cup semisweet chocolate chips
2 tbl sugar
2 cups frozen pitted dark sweet cherries
1 cup frozen low-fat whipped topping — thawed
Heat milk in medium saucepan until very hot but not boiling. Place
water in blender jar. Sprinkle gelatin over water; let stand until
gelatin is completely dissolved, about 1 minute; scrape sides of
blender jar, if necessary.
Add chocolate chips and sugar to blender jar.
Cover and blend at
liquefy until chocolate is melted, about 45 seconds to 1 minute;
scrape sides of blender jar, if necessary. Add cherries. Cover and
blend at liquefy, pulsing 4-5 times, about 10 seconds each time,
Add whipped topping. Cover and blend at stir about 5-
10 seconds, until mixed. Pour into dessert dishes.
Chill until set,
about 1 hour. Serves 6.
Top off your dessert with decorative chocolate shavings and whole
Helpful Hint: For fast cleanup fill your blender jar no more than
half full with warm water. Add a few drops of liquid dish detergent,
cover, and blend at stir until sides are clean, about 10-20 seconds.
