Chocolate Cake
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
2 tsp vanilla extract
1 cup water, boiling
Preheat oven to 350°.
Grease and flour two 9-inch baking pans.
Mix the sugar, flour, cocoa, baking powder, baking soda and salt in a large bowl.
Add the eggs, milk, and vanilla. Whisk or use a mixer for about 2 min on medium speed.
Add the boiling water and mix. The batter will be thin.
Pour the batter evenly into the pans.
Bake 30 to 35 min, until a toothpick, comes out clean from the center.
Let the cakes cool in the pans for about 10 min. Remove them from the pans and let completely cool on a wire rack.
To assemble the cake, use any frosting or filling desired. Makes 24, rich servings.
