Chipotle Lime Chicken with Pineapple Salsa
4 chicken thighs, boneless and skinless
3/4 tsp chipotle powder
1/2 tsp garlic powder
1/2 tsp cumin
3 limes
2 tsp olive oil
1/4 cup red onion, diced
1/2 cup fresh pineapple, diced
1 jalapeno, seeded and diced
2 tbs cilantro leaves, roughly chopped
Heat oven to 350°. Trim visible fat from chicken thighs.
Combine chipotle powder, garlic, and cumin in a small bowl.
Squeeze 1 lime over the tops of chicken. Rub the spice mix to well coat the tops of thighs.
Heat an oven-proof skillet on the stove over high heat. Sear chicken thighs in the skillet, about 2 min per side. Place skillet in the oven to finish cooking, 5 to 10 min.
While chicken is cooking, combine red onion, pineapple, jalapeno, cilantro, and juice from ½ lime in a bowl.
Serve with pineapple salsa. Serves 2
