Chilled Lemon and Pepper Calamari Salad
1/4 cup red onion, minced
1/2 cup celery, chopped
1/2 cup roasted red peppers, chopped
1/2 cup green peppers, sliced
1/4 cup fresh parsley, minced
1 clove garlic, sliced
1 1/2 lemons
1 1/4 tsp red wine vinegar
salt and pepper, to taste
1 lb. fresh squid, tube and tentacles cleaned
Rinse the squid, slice the tubes into 1/2 inch rings, and leave the tentacles whole. Set aside and fill a bowl of cold water with ice.
In another bowl, mix the onion, garlic, celery, red and green peppers, parsley, lemon juice, vinegar, salt, and pepper. Boil a pot of water and a pinch of salt in a medium pot and add the calamari all at once. Cook it until its still tender but cooked, about 45-60 seconds.
Quickly drain and add to the ice bath immediately. Cool for about 4-5 minutes in the ice bath. Add the calamari to the bowl with the salad and toss well.
Add additional salt, pepper, and lemon juice to taste. Cover and refrigerate for an hour. Serves 4 regular servings, and more for the ‘weak at heart’
