      Chickpea Tuna Salad
      for the salad:
      15-oz can tuna
      14-oz can chickpeas, drained
      2 avocados, peeled and pitted
      2 vine ripened tomatoes, cut into wedges
      1 cucumber, halved lengthways and sliced
      1/2 red onion, sliced thinly
      for the dressing:
      1/4 cup olive oil
      2 tbs fresh squeezed lemon juice
      1 tbs fresh chopped parsley (plus extra to serve)
      1 tsp minced garlic
      1/4 tsp salt
      Whisk together dressing ingredients in jug or jar.
      Mix together all of the salad ingredients in a large bowl.

      Toss with dressing. Season with pepper and extra salt if desired. Serves 4
