This can be made into 2 casseroles (8×8) dishes. Freeze one, eat one. My family eats it all, so I use a 9×13 dish.
2 c. chopped cooked chicken breast
2 c. uncooked spaghetti noodles, broken into 2 in. pieces
1 c. chopped red bell pepper
1 c. chopped onion
1 c. chicken broth (can use fat-free kind)
1/2 tsp. salt
1/4 tsp. pepper
2 cans (10.75 oz) condensed mushroom soup, undiluted (can use fat-free kind)
1 c. shredded cheddar cheese
Preheat oven to 350. Combine first 4 ingredients in a large bowl. Combine broth, salt, pepper, and soup in a medium bowl, stirring with a whisk. Add soup mixture to chicken mixture, toss. If you are doing two casseroles, divide it into two 8×8 dish coated with cooking spray and sprinkle 1/2 c. cheese on each. Put one in freezer. Otherwise, Pour mixture into 9×13 dish coated with cooking spray, sprinkle with cheese.
Cover with foil and bake for 35 minutes. Remove foil and bake another 10 minutes.

I like to stretch the budget around here:) our family (3) has a $60 week budget and sometimes I can go as low as $40…of course, that is just food items:)
