      My most prized soup is none other than my Chicken Soup!!! It will cure you from anything 😉

      1 whole chicken for economical reasons~ you can use chicken breasts/thighs/legs as well– your preference really
      You can use as many of these as you want!!! The heartier the better!
      Onions~ you can use a variety of different onions~ 1 cup at least of cut up onions
      Garlic~ 3 cloves minced minimum
      Carrots~ 1 1/2 cups, cut up in small bite-size pieces
      Celery~ 1 cup, cut up in small bite-size pieces
      Zucchini~ 1 whole one, cut up in bite-size pieces
      Cilantro~ 1 loose cup, cut up
      Rice~ 2 cups
      Water- 8 or so cups, will depend on how soupy you would like it!

      Directions
      Now it is time to put in about 1 Tablespoon of olive oil in your pot and saute the onions and garlic first. When the onions are translucent add: Chicken, vegetables, rice and water– **water to your preference, obviously, the more water the soupier it will be!** Let cook for 1 1/2 to 2 hours on medium heat with a lid. Check the chicken to make sure it is cooked and serve in bowls preferable with a nice side of fresh bread with butter! **you can find a great roll recipe here: https://www.squidoo.com/texas-roadhouse-rolls**
      You can garnish with scallions, lemon, avocado. I also add some pepper and Tabasco sauce to mine! Enjoy and let me know how you like it!!!
