1 boneless skinless chicken breast
3/4 cup fresh chopped green onion
16-oz can unsalted diced tomatoes
1/2 tsp salt, to taste (optional)
1/2 tsp garlic powder
1/2 tsp chili powder
1/4 tsp hot red pepper flakes
1 1/2 lb raw medium shrimp, cleaned, peeled, and deveined
2 tsp vegetable oil
1 chopped green bell peppers
Wash and dry chicken breast. Cut into 1/2″ cubes.
In a large skillet, heat oil over medium. Add chicken. Cook 3-5 minutes.
Add green pepper and onion. Cook until tender.
Stir in tomatoes, salt, garlic powder, chili powder, and red pepper flakes.
Bring to boil, reduce heat, and then simmer for 20 to 30 minutes, uncovered until mixture thickens.
Add shrimp and return to boil.
Reduce heat. Cook for an additional 1 to 2 minutes, until the shrimp turns pink. Serve.
