Delicious Chicken Salad Stuffed Tomatoes- these are great for luncheons, or brunches, but are also quite delicious as appetizers
6 large tomatoes or 12 plum tomatoes, or 18 mini tomatoes (for appetizers)
2 cup chicken, cooked and cubed
1/2 cup minced red bell pepper
1/2 cup corn, drained
1 1/2 tablespoon minced red onion
1/4 cup plus 2 tablespoons olive oil
1/4 cup fresh lemon juice
1 tablespoon chopped fresh Italian flat leaf parsley
1 tablespoon Dijon mustard
1 tablespoon mayonnaise
1 teaspoon ground black pepper
1/2 teaspoon salt
Leaf lettuce or spinach leavesCut just the tops off the tomatoes and scoop out the pulp from inside, then flip them so they’ll drain. While they’re resting (I put them on papertowels) mix the chicken, bell pepper, corn, onion with a fork so it’s light and flaky. Then in a separate bowl whisk the olive oil, parsley, mustard, mayonnaise and salt & pepper.Pour this mixture over the chicken mixture, then mix with a fork to coat.
Line each tomato with a fresh spinach leaf and then top with the chicken salad. You can add a dash of paprika to the tops for a bit of color, but it’s not necessary.
