      My son e-mailed me asking for some Chicken recipes so as I type them in for him, I’ll copy and paste them here too!

      Chicken Risotto

      6 T. butter, divided
      2 boneless chicken breasts, cut into small bite-sized pieces
      1 clove garlic, minced
      1 ½ cup rice, uncooked
      3 green onions, chopped
      3 cups chicken broth (not bullion cubes!)
      1 t. basil
      1 cup cheddar cheese, finely shredded

      In a large skillet, melt 2 T. butter. Add chicken and cook over medium heat Stirring constantly until pieces are browned, about 5 minutes.

      Push chicken to one side and add rest of butter, garlic and rice. Cook, stirring constantly until rice is lightly browned. Add green onions, broth, and basil and mix together well.

      Bring to boil; cover and simmer on low for 15 minutes. Stir and if the liquid is absorbed top with cheese. Remove from heat & Lay lid back over for 5 minutes.

      Serve and enjoy
