This is one of my favorite go-to recipes for an easy, comfort meal during the cooler times of the year. However, I think that it’s great any time of the year! LOL! Chicken Rice Casserole with Mushrooms 1 cut-up frying chicken 1 cup long grain white rice 1 envelope onion soup mix 1 can cream of chicken soup 1 1/2 cans water 4-oz can sliced mushrooms 1 tsp salt 1/2 tsp pepper Combine everything except chicken, mixing well. Put into casserole. Arrange chicken on top. Cover tightly and bake at 350° F for 1 hour. Uncover and bake 30 minutes more, stirring once. Also, you can leave the baking dish covered and bake at 325° F for 1 1/2 hours if you don’t want to crisp-up the chicken (or need the extra time;-D).
