Really Cheap meal, you can eat this as is or serve with sides, pasta, hot steamed rice, salad, spaghetti squash, etc.
1 lb ground chicken
1/2 Italian style bread crumbs
1/3 c grated Parmesan cheese
1/4 c. milk
1/2 tsp salt
1/4 tsp pepper
Combine Chicken, bread crumbs, parm cheese, milk, s&p & egg- mix well. Shape into meatballs (makes about 20)
1 T. olive oil
1 jar (24 oz) tomato-basil marinara sauce
1 cup shredded mozzarella cheese
2 T. sliced fresh basil leaves
2 Tbs Parmesan Cheese
In a skillet heat oil (high heat) add meatballs and cook until brown on all sides. Drain any excess fat. Add sauce and simmer about 6 minutes or so, split a meatball to make sure they’re cooked through.
Top with mozzarella, parmesan and basil. Serve over freshly cooked pasta, steamed hot rice or veggies (great on baked spaghetti squash!!).
