Chicken in Tomato Sauce
2 tbs olive oil
1 onion, chopped
2 cloves garlic, minced
4 boneless, skinless chicken breasts, each cut in half crosswise
8-oz can tomato sauce
1 cup taco sauce
1/2 tsp salt
1 green bell pepper, chopped
1 tbs chili powder
1/4 tsp cumin
1/8 tsp pepper
1 tsp sugar
In a large skillet, sauté onion and garlic in olive oil over medium heat until tender, about 6 to 7 min.
Add chicken to the skillet along with tomato sauce, taco sauce, salt, green bell pepper, chili powder, cumin, pepper, and sugar. Stir well.
Simmer this mixture for 15 to 20 min, stirring occasionally, until the sauce is slightly thickened and the chicken is cooked to 160° as measured with a meat thermometer.
Using tongs, remove the chicken from the sauce and place on a plate. Using two forks, shred the chicken into long pieces. Return to the sauce and simmer for another 2 to 3 min so the chicken can absorb some of the sauce. Use as desired: over pasta or rice, tostadas, sandwiches, etc. Makes 6 servings
