3/4 cup Harry & David Pepper & Onion Relish
1 Tbs vegetable oil
1/4 cup onion, chopped
1 clove garlic, minced
1 1/2 cups chicken broth or stock
1/2 cup cream
1 cup cooked chicken breast, diced
salt, to taste
3/4 cup Monterey jack cheese, gratedHeat oil in pot over medium heat & saute onion & garlic. Add relish & broth & cook with pot covered, for 15 minutes over low heat. Add cream, salt & chicken, & simmer another 8-10 minutes over low heat.
Stir in in cheese & serve hot.Serves 4
