(Serves 4)
8oz pasta
1 (15oz) can chunky Italian tomato sauce
1 cup sliced onion
1 cup sliced mushrooms
1 cup green bell pepper
cooking spray
4 chicken breast (about 1 lb)
Salt & pepper to taste
1.) Cook pasta. Drain.
2.) Combine tomato sauce, onion, mushrooms & bell pepper. Cook.
3.) Coat skillet with spray; heat over Med.-High heat.
Cook chicken 3-4 minutes per side or until lightly browned.
4.) Add sauce to skillet; season with salt & pepper. Reduce heat, simmer 12-15 minutes. Serve over pasta.
