ParticipantMade chicken burritos one night (tortilla, shredded cooked chicken breast, canned beans – pinto and black – canned or frozen corn, shredded cheese, salsa). After we ate dinner, I pre-made burritos for another dinner until all the tortillas & cheese were gone. With the leftover beans, shredded chicken, salsa, and corn, I poured it all into a saucepan with a cup or two of broth (your choice of chicken, beef, or veggie), brought to a boil then simmered for a few minutes. Soup was lunch the next day (thermos brought to work) and it was delicious!!! This is easily a vegetarian soup without the shredded chicken and using vegetable broth.
My ingredients for both:
1 pkg. flour tortillas
1 can each pinto & black beans
1 can corn
1 jar salsa
1 pkg. liquid vegetable broth (one bullion cube equiv.)
1/2-1 cup shredded cheddar or colby cheese
