This is a great first-night dinner on the camping trip that cooks in a Dutch oven while you get the camp set up. So build up your fire and nestle the Dutch oven in the fire. Prepare this at home and pack up for your camping trip.
Chicken, Broccoli, and Rice Casserole
1 tbs oil
1 lb boneless skinless chicken breasts, cut into bite-size pieces
3 cups small broccoli florets
1 onion, chopped
1 cup fat-free reduced-sodium chicken broth
1-1/4 cups instant white rice, uncooked (just so ya know, instant rice is ONLY allowed for camping trips
)
8-oz tub of cream cheese spread
2 tbs milk
1 tsp Italian seasoning
1 cup shredded Italian 5 cheese
Heat oil in large skillet on medium-high heat. Add chicken, broccoli and onions. Cook and stir 5 min. Stir in broth. Bring to boil. Add next 4 ingredients. Mix well.
Spoon into Dutch oven sprayed with cooking spray. Top with shredded cheese. Cover. Refrigerate or place in iced cooler for the camping trip
Bake/cook 25-50 min or until heated through (depending how hot your fire is), stirring occasionally, uncovering for the last 10 min. Serves 6
