ParticipantChicken Breasts with Four Herbs
2 boneless skinless chicken breast halves
3 tbs olive oil
1 tbs chopped chervil
1 tbs chopped chives
1 tbs chopped Italian parsley
1/2 tbs chopped tarragon
1/2 tsp finely grated lemon peel
1/4 tsp salt
1/8 tsp pepper
Place chicken in shallow dish. Combine all remaining ingredients in small bowl. Reserve 2 tsp of the mixture for garnish. Spread remaining herb mixture over chicken, turning to coat. Let stand 15 to 30 minutes. Heat medium nonstick skillet over medium heat until hot. Cook chicken 7 to 9 minutes or until no longer pink in center, turning once. Let stand 10 minutes. Slice thickly across the grain. Top with reserved herb mixture. 2 servings = about 330 calories.

This sounds really good! I have lots of boneless chicken breasts in the freezer from stocking up when it was on sale a couple of weeks ago. Thanks!
