      Chicken, Bacon & Tomato Pasta
3 cups whole wheat farfalle, uncooked
1 lb boneless skinless chicken breasts, cut into bite-size pieces
14-1/2 oz can Italian-style diced tomatoes, undrained
      4 oz cream cheese, cubed
      3 slices cooked bacon, crumbled
      1/2 cup water
      1/4 tsp pepper
      3 tbs parmesan cheese, grated
Cook pasta as directed on package, omitting salt.
Meanwhile, cook chicken in large skillet on medium heat 5 to 6 min or until done, stirring occasionally.

Add all remaining ingredients except Parmesan. Mix well. Cook 3 min or until cream cheese is completely melted and chicken mixture is heated through, stirring frequently.
      Drain pasta.

Place in large bowl. Add chicken mixture. Mix lightly.

      Sprinkle with Parmesan. Serves 4

      Deweese

This dish is fabulous with regular macaroni too, we add Fresh steamed broccoli (sometimes a small zucchini sliced!). Rather than diced tomatoes we use sliced plum tomatoes with seeds removed. It’s quick, inexpensive and filling!

Deweese…whatever additions or changes that you make to the recipe, making it your own, is terrific. I think the additions that you mentioned are great and reduce the need for preparing a side dish! Marvelous!
