For all of you that have had those wonderful lettuce cup salads at your favorite restaurant…
Chicken, Bacon, Ranch Lettuce Cups
3 cups cooked chicken breast, diced
3-4 slices bacon, cooked and diced
2 green onions, thinly sliced
⅓ cup plain non fat Greek yogurt
2 tbs low fat buttermilk
1 ½ tbs light mayonnaise
1 tbs fresh dill, chopped
½ tsp kosher salt
¼ tsp black pepper
bibb/butter lettuce leaves for serving
In a small bowl whisk together the Greek yogurt, mayonnaise, dill, salt, and pepper.
In a large bowl add in the diced chicken, bacon, and sliced green onions.
Pour the dressing in with the chicken mixture and fold together until everything is coated.
Separate the lettuce leaves, wash, and dry them.
Spoon some of the chicken mixture into each lettuce leaf.
Serve immediately. Serves 4
