Grease a 8×8″ casserole dish with nonstick cooking spray. Season the chicken with salt and pepper before arranging it in the baking dish. Scatter the carrots, onions, and celery around the chicken. Drizzle the chicken and vegetables with olive oil, then sprinkle with rosemary and thyme. Bake for 35-40 minutes or until chicken is cooked through.
