I use idahon russet potatoes, but you can use any kind you prefer
5-8 potatoes depending on how thick you want it
8 cups of water
5 chicken bollion cubes
peel and then dice the potoes into the pot with the water, stove should be on high to med high,
boil until the potatoes are soft and then thicken with either corn starch and water or a flour and water mix, the corn starch and water mix is less lumpy and thickens better, use about 1/4 cup corn starch with the same amount water.
Once the broth is thickened, turn the heat off and remove from the heat, add grated cheese, any kind you like, I’ve used mozzarella, cheddar, colby jack.It is up to taste. Just grate it and add cheese to your preferred taste.
You can add a couple of strips of cooked bacon, or ham if you like a little extra flavor. My daughter prefers it without so I take a little out when I add bacon for the boys.Enjoy!!
