Cheesy Potato Pancakes 3 cups mashed potatoes 1 cup shredded cheddar cheese 2 tbs scallions, chopped 1 egg 2/3 cup plain flour sour cream Combine mashed potatoes, cheese, scallions, egg, and 3 tbs flour in a bowl and mix well. Separate mixture into 12 equal sections. Roll with your hands and flatten into round pancake shapes. Flip each one in a dish of the remaining flour. Coat a large pan in vegetable oil and heat before adding the pancakes. Work separately, cooking them for 3 minutes or until crispy. Salt and serve with sour cream and parsley.
