I made a big pot of Refried beans last night and had some leftovers (not a lot mind you!). Here’s a delicious day after recipe or in this case game day!! recipe for cheesy mexican bean dip.
You’ll need
3- 4 cups refried beans (or 2 cans)
a bit of oil
1 medium white onion, finely chopped (about 1 cup)
5 medium garlic cloves, minced
1 teaspoon salt
3/4 teaspoon ground cumin
1/2 c. sour cream
8 ounces sharp cheddar cheese, shredded (about 3 cups) & divided in half
1/2 cup chopped Pickled Jalapeños (Hot or mild, your choice)
2 tablespoons mild Mexican-style hot sauce, such as Cholula
Tortilla chips, for serving
Preheat oven to 350º F.
Heat oil in skillet over medium-high heat and sauté onions until softened and translucent then add the minced garlic, sauté for another minute or so until the garlic smells really fragrant.
Mix in all remaining ingredients (using just half of the cheese!!) then season generously with salt and pepper.
Transfer dip to a large baking dish and top with remaining cheese.
Place in oven and bake for 20 minutes, or until cheese is melted and bubbly.
Remove from oven and let cool 5 minutes before topping with additional minced jalapeño and serve with warm tortilla chips.
