What is the best breakfast ever? Easy — the breakfast that you make on a camping trip! It sets the tone for having a great day in the outdoors. At least until you are ready for a snack because you are famished from your hike 😉
Cheesy Hash Breakfast Skillet
6 slices bacon
1 onion, chopped
4 cups frozen diced hash brown potatoes
1 1/2 cups cheddar cheese, shredded
6 eggs
1 Cook bacon in large nonstick skillet on medium heat until crispy. Remove bacon and allow to drain on paper towels. Save 3 tbs of the bacon grease and discard the rest.
2 Add onions and potatoes to reserved bacon grease in skillet. Cover, cook and stir occasionally on medium-high heat for about 14 min or until potatoes are browned and then stir in cheese.
3 Make 6 wells in potato mixture and fill the wells with eggs. Top with bacon. Cook, covered, 3 to 4 min until egg whites are firm and yolks are cooked to desired doneness.
4 Remove from heat. Let stand, covered, at least 1 min before serving. Serves 6
