Cheesy Baked Potatoes with Fish
1 leftover fish fillet (any kind works fine), chopped
1 cup shredded cheese — your favorite
1/4 cup sour cream
4 potatoes
Preheat oven to 400. Bake the potatoes in microwave for about 10 minutes. Cool until able to handle.
Cut in half and scoop out potato and place in a bowl, but leave enough to have a firm skin. Mix remaining ingredients with the potatoes. Spoon mixture into potato shells.
Bake in oven 10-15 minutes. 4 servings
