Cheese-Corn Casserole
2 eggs, beaten
3 cups leftover corn, any style
8-1/2 oz pkg corn muffin mix
1/2 cup sour cream
1/8 tsp red pepper
8-oz shredded three-cheese blend
4 green onions, sliced
Heat oven to 375°.
Combine first 5 ingredients in medium bowl. Stir in 1/2 cup cheese. Pour into 2-qt casserole sprayed with cooking spray.
Bake 40 min.
Meanwhile, combine remaining cheese and onions.
Top casserole with cheese mixture. Bake 15 min or until lightly browned. Serves 12
