Extra cheap classic with a twist.
Find the cheapest mac & cheese you can get. I have seen it for $.33 a box at some stores. Use the most inexpensive of all items. The flavor is in the veggies and spice!
1 box mac & cheese
1/2 bag frozen broccoli (can use fresh from a garden and save more!)
1/2 each peppers – finely chopped (red, green, yellow)
1/2 jalapeno pepper – finely chopped
onion – finely chopped
Garlic grapeseed oil
1 chicken breast
Saute the chicken breast in a skillet with garlic grapeseed oil coating the bottom of the pan. Once complete, add in the peppers, jalapeno pepper, and onion. Saute for another couple minutes to heat and add flavor.
Cook mac and cheese as directed while sauteing the chicken and veggies. Once complete pour chicken and veggies into the mac & cheese, mix well, and enjoy!
Very filling due to veggies and doesn’t have as many calories as you would eat in mac & cheese alone (if you are one to eat the entire box yourself). Makes between 2 and 3 servings based upon your appetite.
