Cashew Turkey Stir-Fry
1 grilled turkey Tenderloin or 2 cups chopped cooked turkey
1/4 cup orange juice
2 tsp cornstarch
1 tbs honey
1 tbs oil
1 onion, finely chopped
1 garlic clove, minced
1 cup baby carrots
1/2 cup cashew pieces
Cut tenderloin into 1″ chunks and set aside. Combine orange juice, cornstarch and honey in a small bowl and mix well. Heat oil in a large nonstick skillet. Add onion and garlic and stir fry over medium high heat for 4-5 minutes until onion is crisp-tender. Add carrots and cover. Cook for 4 minutes longer until carrots are crisp tender, stirring occasionally. Add turkey and orange juice mixture. Cook and stir for 2-3 minutes or until turkey is heated and sauce is thickened and bubbly. Add cashews. Serves 2
