      2 cups flour
      2 tsp baking soda
      1 tsp salt
      2 tsp cinnamon
      1/2 tsp nutmeg
      2 cups sugar
      1 1/2 cups vegetable oil
      4 eggs
      3 cups raw grated carrots (about 1 lb)

      Sift flour, baking soda, salt, cinnamon, & nutmeg into large bowl. Stir in sugar & mix in oil. Beat in eggs one at a time. Mix in carrots. Pour into 3 greased & floured 9 inch cake pans. Bake for 25-30 minutes, or until cake pulls away from sides of pan slightly. Frost with cream cheese frosting.

      Serves 12-16
