Caribbean Flavored Pork Tenderloin
Cut the meat crosswise into 1/2-inch-thick medallions. Brush them with a little oil. Then season with allspice, ginger, garlic and crushed red pepper flakes.
Saute the pieces over high heat, 4 to 5 minutes on each side. Squeeze a little lime juice over the cooked meat, and serve with rice or black beans and a green salad. Use the pan drippings to make a gravy for the next meal.
Pork Tenderloin and Gravy over Noodles
Prepare noodles according to package directions. While this is in the works, heat the leftover pork slices in the prepared gravy. When all is done, serve with your favorite veggie or salad!
