Carbonara Frittata 4 eggs 1/4 cup light cream 1/4 tsp salt dash pepper 3/4 cup leftover spaghetti carbonara 3/4 cup grated Swiss, Monterey Jack, or Havarti cheese healthy pinch of grated Parmesan cheese — enough to cover casserole Preheat oven to 375°F. Spray a 15-oz casserole dish (with nonstick cooking spray and set aside. In bowl, beat eggs with cream, salt, and pepper until foamy. Place the leftover spaghetti carbonara in the prepared dish. Top with the Swiss cheese and then pour the egg mixture over all. Sprinkle with Parmesan cheese. Bake for 16-20 minutes or until the frittata is puffed and light golden brown on top. Cut into squares and serve immediately. Serves 2-4
