These are my favorite fall/autumn cookies, they have just the right amount of apples and caramel and they’re awesome.
2 sticks salted butter, softened
1 c. sugar
1/2 c. brown sugar
2 eggs
2 tsp.vanilla
2 2/3 c. flour
1 c. graham cracker crumbs
2 tsp.baking powder
1/2 tsp. kosher salt
1/2 tsp. cinnamon
1 large apple, peeled, cored and finely chopped
1 c.vanilla caramels
3 T. whipping creamWhip butter for 30 seconds with a hand or stand mixer, then Beat in sugars until fluffy. Add eggs, one at a time, whipping, then add vanilla.
Add dry ingredients to the butter mixture and beat until combined. Fold in the apples.
Drop dough by the tablespoon-full onto parchment-lined cookie sheets. Bake at 350 for about 12 minutes.
Microwave caramels and cream until nearly melted, whisking briskly until smooth.
Drizzle over the cooled cookies.
