Caprese Salad III 1 cup cherry tomatoes, halved 8-oz pkg mozzarella cheese, shredded 2 tbs homemade basil pesto or store bought 1 tsp minced garlic 1/4 cup olive oil Salt and pepper, to taste 2 ripe avocados peeled, seeded and chopped 1/2 cup fresh basil leaves 2 tbs balsamic vinaigrette In a salad bowl, combine tomatoes, mozzarella, pesto, garlic, olive oil, salt and pepper in a bowl. Mix well to evenly coat in the dressing. Toss with the avocados and basil leaves. Drizzle with balsamic vinaigrette.
Taste test and add more salt/pepper, if needed. Serve immediately. Serves 4 :arizona:
