Candied Yam Torte

      Candied Yam Torte:8-):
      4 cups yams, peeled, cut into 1/4-inch slices
      2 tsp lemon juice
      1 prepared pie crust (need a recipe? let me know)
      1 cup packed brown sugar
      1 tbs all-purpose flour
      1/2 tsp nutmeg
      1/2 cinnamon
      1 tsp vanilla
      2 tbs butter, softened
      2 cups marshmallows
      Heat oven to 375 degrees F. Sprinkle yams with lemon juice. Place pie crust in 9-inch pie plate. In large bowl, combine brown sugar, flour, nutmeg, cinnamon and vanilla. Add yam slices and butter. Toss well to combine. Fill pie crust gently, arranging slices so they do not hang over sides. Bake 1 hour. Top pie with even layer of marshmallows. Bake an additional 20 minutes. Let cool 10 minutes. When baked, slices should be tender and marshmallows brown. Serve as side dish with dinner. 6 to 8 servings = about 675 calories.
